Hōtō is said to reach back to Japan’s warring-states age — by local legend, even to the field rations of the warlord Takeda Shingen. Those wide, flat wheat noodles are brought together in a deep dashi broth — its umami drawn out slowly — crowded with kabocha pumpkin, napa cabbage, mushrooms, and pork. ほうとうの起源は戦国の世までさかのぼると言われ、甲斐の武将・武田信玄の陣中食だったという伝承も残ります。その幅広の平打ち麺を、じっくりひいた出汁の鍋へ。かぼちゃ・白菜・きのこ・豚肉がひしめく、ひと鍋の煮込みになります。
Just before it leaves the kitchen, a stroke of our house kaeshi goes in and the whole pot blooms with flavor. It reaches you still boiling, the broth thick and golden where the kabocha has melted in. ACT 02 — 煮込み第二幕 — 煮込み
It all simmers in the dashi over the flame — the kabocha sweetening the broth, the pork lending its richness, the soup turning thick and glossy. Then, just before it leaves us, a stroke of house kaeshi: the flavor blooms all at once, and the pot goes out still bubbling. すべてを出汁へ、火にかけて。かぼちゃが甘みを、豚肉がコクを汁へ移し、汁はとろみを増して艶をまとう。そして提供の寸前、自家製のカエシをひと差し——風味が一気に立ちのぼり、煮え立ったままお席へ。

Now the pot is yours. Stir our specially blended miso through the broth, little by little, to your own taste — then lift. Wide, chewy ribbons, soft at the edge and firm at the core, the broth still clinging on.
